Any who, with my son become larger by the day and growing into a typical boy and already eating me out of house and home, I've decided to become even more creative with my meals so that hopefully (fingers crossed) with enough variety in his diet maybe just maybe he won't become a fussy eating kid. "Yeah right Bec, it's inevitable" that's what I keep on hearing, but I have to grab onto this minuscule bit of hope. We'll see anyway.
So, in my endeavours to become more creative, I decided to make pizza for lunch the other day as Dave was making my veggie plot and I thought he would enjoy something different for lunch to keep him going so that I would be able to plant my veggies before winter sets in.
I've been browsing facebook for ideas and have come across a few fantastic pages for parents wanting inspiration for cooking for kids. The best one by far is called "Cooking for Kids". Everyone seems to have a positive input on the page and come up with interesting and creative meal ideas for the busy day to day family. Whilst browsing (and becoming a liker of the page) I found this versatile recipe for two ingredient dough. It takes minutes to whip together and can be made as a dough base for pretty much anything. I've tried and tested the pizza and was a two thumbs up winner in my house, and I've seen other parents posting about making scrolls (sweet and savoury) this has to be the most popular thing to make with the dough but I am yet to try it.
I had a thought that you could also make the dough and use it as the base for the following; pasties, calzones, bread twists/pull apart etc. If you try the dough I'd love to ear about your creations and I think you should also let the facebook site know too. This is a prime example of everyday people just trying to pass it on - pass on tips and ideas when it comes to food with helping your family and little fussy ones to eat. Wonderful.
As always, enough with the talking and here's the incredibly simple recipe.
TWO INGREDIENT DOUGHIngredients.
1 cup Natural Yoghurt
2 1/2 cup Self Raising Flour
Note - you may need to add more flour depending on the brand of yoghurt you use, so if you find your dough too sticky keep adding flour at 1/4 cup increments until your dough comes together.
Method.
Mix Both ingredients together, knead the dough until all the stickiness is gone and the dough comes together in a nice ball. Roll out as necessary.
