Now, I make Dave think about a cake he will eat for the week and chocolate always tends to be the reoccurring theme with him. This from a guy who says he doesn't eat sweets. HA! So i spruced up a simple chocolate cake mix this week with a simple shot of espresso. You could add instant coffee, we just have an Aldi coffee machine so BAM and I've got a quick hit of espresso.
I'll admit I cheated this week with using a packet mix chocolate cake I found at the back of the pantry, however I did make the whipped ganache and chopped up a block of dark chocolate with hazelnuts to sprinkle on top to make it a tad more fancy ... and appealing. As much as I'd love to call myself a baking guru, I'm not. I have the best imagination of how the finish product is going to look but it more or less always tends to turn out like a baking fail - looks wise anyway, not the flavour.I was googling frosting's as I had no icing/powered sugar to make it with and I didn't want anything runny and I found whipped ganache. Before yesterday I had never heard of such a delicious thing. And to see how easy it was to make made me excited about a cake that just might look like something edible. cream, chocolate, cooling time, then whip it. Fantastic.
Anyway, as i cheated with the cake mix, I'll only give you the recipe for the whipped ganache. If you're wanting to make the cake, I suggest you buy your favourite cheap cake mix, add a shot of espresso and bake as usual or as per the directions.
Enough talking, here's the recipe
WHIPPED CHOCOLATE GANACHE
Ingredients.
1 cup of heavy cream
1 block of dark chocolate
Method.
Step 1.
Over a med to low heat - cook your cream until it just boils.
Step2.
Break your chocolate into a mixing bowl, once the cream has boiled pour of the chocolate immediately and stir until all the chocolate has melted and the mix become dark and glossy. Place into the fridge to cool and set.
Tip, the longer you leave it in the fridge to set the better it is for whipping.
Step 3.
Once cooled and set, take your electric beater and whip. You only need to whip for a few minutes until it becomes light and fluffy. The colour will change looking like a milk chocolate colour.
Now you can frost your cake any which way you like.
